The Dish: Avocado Salad & Mediterranean Tuna
Ingredients for Avocado Salad (Serves: 1):
1 hass avocado, in slices
1/2 oz. of a red onion, sliced thin
1 oz. of a tomato, diced
juice of 1/2 a lemon juice
juice of 1/2 an orange juice
cilantro, chopped
salt, to taste
white pepper, to taste
1/2 oz. of extra virgin olive oil
fried onion for garnish
Method of Preparation:
-Start by slicing and coring the avocado. Then, remove the skin and place it in a bowl.
-Next, mix the avocado with red onion, lemon juice, orange juice, cilantro, salt, white pepper and a little olive oil.
-Chef Hector likes to place the mixture inside a ring mold. He pats it down and then plates it. You can finish by adding a drizzle of olive oil around the plate and some fried onions.
Ingredients for Mediterranean Tuna (Serves: 1):
7 oz. fresh tuna steak
salt, ta taste
2 Tbs. of canola oil
1/2 Tbs of butter
6 oz. of stewed tomatoes (to serve on the side)
1/2 oz. of capers for garnish
2 oz. of blanched green beans (to serve on the side)
fried onion for garnish
1 oz. kalamata olives for garnish
Method of Preparation:
-Begin by seasoning the tuna with salt.
-Then, sear the tuna in a little canola oil and melted butter. Once, its ready, cut it in slices.
-At the restaurant, they serve the mediterranean tuna with stewed tomatoes, capers, green beans, fried onion, kalamata olives and a drizzle of olive oil.
