Bite with Belkys: Banana & Nutella Pancakes

Ingredients for Banana & Nutella Pancakes
2 cups flour
2 tbs sugar
4 tsp baking powder
1 tsp baking soda
1 tsp fine salt
2 cups buttermilk
1 cup whole milk
4 tbs melted butter
1 tsp vanilla extract
2 beaten eggs
6 oz nutella
1/4 cup blueberries
8-10 blackberries (or other favorite fruit)
Method of Preparation
-Preheat pancake griddle to 350 degrees.
-Mix dry ingredients: add flour, sugar, baking powder, baking soda, sugar and salt. Whisk and set aside.
-Mix wet ingredients: in a second bowl, add buttermilk, vanilla extract and eggs. Whisk together.
-Now, mix the wet ingredients in with the dry until just combined. Add the whole milk until your pancake batter reaches the desired consistency.
-Lightly butter the griddle or spray with non-stick oil. Wipe off thoroughly with a paper towel.
-Gently ladle the pancake batter onto the griddle. Cook two minutes, then place 5-6 bananas on each pancake.
-When the bubbles begin to set around the edges and the griddle-side is golden, gently flip the pancakes. Continue to cook 2-3 minutes until the pancake is set.
Serve with mimosas
-Layer a spoonful of nutella in between the pancakes allowing it to warm. Garnish with fresh berries.
