Bite with Belkys: Fiesta Fajitas

Looking for something fun and easy to serve to friends? Fajitas are always a crowd pleaser. A little taste of Mexico on the menu. Time to Grab a Bite.

The Dish: Fiesta Fajitas

Ingredients for fiesta fajitas:

2 lbs skirt steak, chicken, or sautéed veggies
2 large yellow onions, peeled 
2 red bell peppers 
2 green bell peppers 
1 cup guacamole
1 cup sour cream
1 cup pico de gallo
6-8 soft grilled flour, soft corn or whole wheat tortillas

Method of preparation for fajitas:

-Marinate chicken or steak overnight in the marinade of your choice.

-Grill steak and/or chicken for five to six minutes until done. Slice into thin strips or dice it, if preferred.

-Slice the green and red bell peppers and yellow onion into thin slices.

-Heat pan to medium heat and add 1 tablespoon of olive oil. Sauté bell peppers and onions in pan until onions are transparent and peppers are soft.

-When steak/chicken is done, place on a plate with sautéed veggies and tortillas.

-Place guacamole, sour cream, and pico de gallo on the side.

-Serve immediately

Ingredients for pico de gallo:

2 lbs diced roma tomatoes
2 cups diced red onions
10 oz diced cilantro
2 diced jalapeños
4 tbls olive oil
6 oz fresh squeezed lime juice
salt and pepper to taste

Method of preparation for pico de gallo:

-Mix ingredients together in a bowl.

-Serve with fajitas or chips.

Ingredients for guacamole

6 haas avocados
4 diced green onions or 2 oz diced red onions
1 cup diced tomatoes
4 tbls olive oil
1 jalapeño
6 tbls cilantro
salt and pepper to taste

Method of preparation for guacamole:

-Cut the avocado and take out the pit. Scoop out the pulp and add salt, pepper, olive oil and lime juice. Smash thoroughly with a fork.

-Now add tomatoes, cilantro, onions and jalapeño.

-Mix and serve with fiesta fajitas or chips.

Serving suggestion:

Serve with your favorite Mexican beer

To Plate:

Serves: 2 to 4 people
