Salmon lovers, this dish is for you. A spicy twist to preparing your favorite fish in tonight's Bite with Belkys.

The Dish: Ginger Crusted Salmon
Ingredients:
6-7 oz north atlantic salmon
1/4 cup olive oil blend (half olive oil and half vegetable oil)
kosher salt, to taste
pepper, to taste
1/4 cup of ginger, minced
1/4 cup of green onion, minced
1/2 cup of panko breadcrumbs
1 1/2 cup of snow peas and carrots, julienne
Method of Preparation:
-Begin by seasoning the salmon with salt and pepper. Then, sear it in a little olive oil blend until it is medium rare.
-Next, top the fish with a ginger crust. For the ginger crust combine fresh ginger with green onions, olive oil and breadcrumbs.
-Finish cooking the salmon in a 350 degree oven for about five to six minutes.
-Now, blanch some slices snow peas and carrots in boiling water. Then, sauté the veggies with a dash of olive oil. Add a pinch of salt and toss.
Ingredients for Sesame Peanut Vinaigrette:
1/8 cup of peanut butter
1/8 cup of honey
1/8 cup of ginger, chopped
1 Tbs of garlic, minced
1/2 tsp of cayenne pepper
1/8 cup of sesame oil
1/8 cup of soy sauce
1/4 cup of rice wine vinegar
Method of Preparation:
-In a blender mix all the ingredients. You will have a smooth consistency.
To Plate:
At the restaurant they serve this dish with a side of wasabi mashed potatoes. Then, they add the sesame peanut vinaigrette, tomato oil, veggies and the salmon. You can garnish with fried carrot strings.
