The Restaurant: Giovanni's Coal Fire Pizza
The Dish: Chicken Milanese

Ingredients:

2 chicken breast
1/4 oz. of all purpose flour
egg wash (3 eggs with 1/4 cup of milk)
4 oz. of bread crumbs (mixed with parsley flakes, garlic, salt and pepper)
1 oz. of extra virgin olive oil
1 cup of rigatoni pasta
1/4 lb of fresh mozzarella, chopped
1 tomato, chopped
12 fresh arugula leaves
3 oz. balsamic vinaigrette
tomato sauce, to taste

Method of Preparation:

-Start by coating the chicken breast in all purpose flour, an egg wash and bread crumbs.

-Then, place the chicken in a baking dish and drizzle it with a little extra virgin olive oil. Bake the chicken in a 350 degree oven for 25 to 30 minutes, until its a nice golden brown.

-In the meantime, cook the rigatoni pasta in boiling water.

-Once the chicken is ready, top it with fresh mozzarella, chopped tomatoes, arugula and balsamic vinaigrette.

To Plate:

Place the pasta next to the chicken and top it with your favorite tomato sauce.

Serving Suggestion: Chianti
