Bite with Belkys: Lobster Hash

Love hash browns? Who doesn't? Tonight, a local chef is showing us to make them with a little twist.Time to grab a Bite with Belkys.

The Restaurant: Kobe Club in Miami Beach
The Chef: Tim Nickey
The Dish: Lobster Hash

Ingredients:

1 large Idaho potato
3 Tbs. of olive oil
1 onion, diced
Salt and pepper, to taste
2 oz. of chorizo, chopped
3 oz. of lobster meat

Method of Preparation:

-Start with the potatoes. Peel them and dice them into small cubes. Cook the potatoes half way in a pot of boiling water.

-Next, pour olive oil in a hot pan and saute some onions. Sprinkle the onions with salt and pepper to taste.

-After a few minutes, add the potatoes and once it all starts to turn golden brown, transfer it to a cast iron skillet.

-Now bake the potatoes and onions for about 15 minutes in a 450 degree oven.

-In the meantime, saute chopped chorizo with precooked lobster meat in a little olive oil.

-Once the potato hash is ready add the chorizo and lobster meat mix over the top.

To Plate the Dish:

At the restaurant, Chef Tim likes to garnish with creme fraiche, diced red bell pepper and chopped chive.

Serving Suggestion: Beer
