Bite with Belkys: Salmon Tartar from The Wine Depot and Bistro 555

All Bite with Belkys

If taking care of dinner means ordering out-- we have a recipe you can handle. The hardest part is a little chopping and mixing. Time to grab A Bite with Belkys.

The Chef: Jerome Cormouls
The Restaurant: The Wine Depot and Bistro 555, Miami Beach
The Dish: Salmon Tartar

Ingredients:
3 oz. fresh salmon
1/4 cup of mango
1/3 cup red pepper
1 tablespoon cilantro
1 teaspoon chives
Pinch of salt and pepper
Dash of olive oil
1/2 cup heavy cream
Juice of 1/2 a lemon and 1/2 a lime
Dill (to taste)

Method of Preparation:

-Begin by slicing the Salmon into 1 to 2-inch cubes. Then let it cool in the fridge.

-Prepare the Mango Salsa by peeling and dicing a mango into bite size pieces. Then, chop up a red bell pepper in the same size as the mango. Next, rough chop some cilantro and chives.

-In a bowl, mix Salmon with the Mango Salsa. Season it with a pinch of salt and pepper, and add a drizzle of extra virgin olive oil..

-To finish, mix the tartar one more time.

-For garnish, Chef Jerome likes to combine heavy cream with lemon and lime juice.

To Plate:

At the restaurant, they use a ring mold to present the Salmon Tartar. Then, they drizzle the heavy cream mixture around the plate and add a few sprigs of fresh dill.

Serving Suggestion: Sauvignon Blanc.

Serves: 1
