Bite with Belkys: Brain Mom's Pecan Pie from Cha Cha Rooster Inside The Lords Hotel

It's always a hit to show up at a party with a dish guests can't stop talking about. A South Florida chef showing us how to make a big hit. Time to grab a Bite with Belkys.

The Chef: Surelys Figueroa
The Restaurant: Cha Cha Rooster (Inside the Lords Hotel)
The Dish: Brian Mom's Pecan Pie

Ingredients for Pie Crust:

4 oz. of butter (room temperature)
6 oz. of confectioners sugar
2 whole eggs
1 Tbs. of vanilla extract
1 oz. of honey
6 1/2 egg yolks
12 1/2 oz. of all purpose flour

Method of Preparation:

-In a large bowl, whisk butter, confectioners sugar, two eggs, vanilla extract, honey and egg yolks.

-Then, combine the all purpose flour little by little.

-Next, seal the dough in plastic wrap and place it in the fridge for at least two hours.

Ingredients for Pie Filling:

1 bag of pecan halves
1/2 cup of butter, melted
1 cup of dark corn syrup (or molasses)
2 eggs
1 Tbs of vanilla extract
1/2 cup of sugar
1 Tbs of all purpose flour

Method of Preparation:

-Combine the pecans with melted butter, dark corn syrup, eggs and vanilla extract. Then, toss in sugar and all purpose flour.

-At the restaurant, they assemble the pie in individual molds. First, they roll out the dough. Then, place the pie crust and add the filling. They bake in a 350 degree oven for 10 minutes.

To Plate:

Transfer the pie to a plate and garnish with whipped cream and a sprig of mint.

Serving Suggestion: Coffee
