Bite with Belkys: Mediterranean Flatbread from Lido Restaurant and Bayside Grill (inside the Standard Spa)
When you're getting ready for a spa retreat or fitness class, you probably want to eat light. Tonight, the chef at a local spa is showing us what his guest are raving about. Time to grab a Bite with Belkys.
The Chef: Mark Zeitouni
The Restaurant: Lido Restaurant & Bayside Grill
The Dish: Mediterranean Flatbread
1 flatbread (pizza shell or wrap of your choice)
1 cup of hummus
1 cup of sprouts (alfalfa, pea or other)
1/4 cup of heirloom tomato, chopped
1/4 cup of mushrooms, chopped
1/2 cup of olives, chopped
1/4 cup of red tomato, chopped
1/2 cup of feta cheese, crumbled
1/4 cup of extra virgin olive oil
sea salt, to taste
5 basil leaves, chopped
Method of Preparation:
-Start by toasting the flatbread.
-Then, spread hummus over the flatbread. Sprinkle sprouts, heirloom tomato, mushrooms, olives, red tomato, feta cheese, a little extra virgin olive oil, sea salt and basil.
Simply cut the flatbread in 4 and serve.
Serving Suggestion: Lido Lemonade
