Bite with Belkys: Fried Chicken from Sustain Restaurant & Bar

Cooking tips from the experts can make a big difference in your meal. Tonight, one chef showing us how to make his mouth-watering fried chicken. Time to Grab a Bite.

The Dish: Fried Chicken

Ingredients:

1 whole chicken
1 gallon of cold water
1 cup of kosher salt
1/2 cup of sugar
1 Tbs. of whole coriander seeds
1 Tbs. of black peppercorns
1 bunch of fresh thyme
1 small bunch of fresh parsley
zest of 2 lemons
juice of 2 lemons
3 cups of all purpose flour (mixed with 2 Tbs of garlic powder, 2 Tbs of onion powder, 1 tsp of cayenne pepper, 2 tsp of paprika, 2 tsp of chopped thyme, 1/2 tsp of ground white pepper and 2 tsp of kosher salt)
2 cups of buttermilk
peanut oil to deep fry

Method of Preparation:

-First, debone the chicken. Then, prepare a brine. In a pot of water, add salt, sugar, coriander seeds, black pepper, thyme, parsley, lemon zest and lemon juice. Let the brine come to a boil and then, let it cool down.

-Next, marinate the chicken in the brine for 6 to 24 hours.

-At the restaurant, they steam the chicken for 20 minutes. Chef Alex says you can skip this step at home.

-Now, remove the skin from the chicken and coat it in a seasoned flour, buttermilk and back in the flour.

-After, deep fry the chicken in peanut oil.

-Lastly, season with a pinch of sea salt.

To Plate:

Start with some escarole. Then, place the fried chicken and add a little honey on the side.

Serving Suggestion: Beer

Serves: 2-3
