Bite with Belkys: Chicken Limone from Bottega Grill
There are so many ways to cook chicken, so don't stick to one recipe. Tonight, one chef is showing us how to change it up with a nice veggie topping. Let's grab A Bite with Belkys.

The Dish: Chicken Limone
8 oz. chicken breast
1 Tbs of butter, melted
1/4 cup of button mushroom, chopped
1/2 of 1 tomato, diced small
1/4 cup of crispy pancetta, chopped
1 cup of cooked pasta
1 Tbs of lemon butter sauce
Method of Preparation:
-First, marinate the chicken for at least one hour. At the restaurant, they make their own marinade. They use Italian dressing with fresh herbs, ground pepper, garlic and onion.
-Then, grill the chicken.
-Next, prepare a topping. In a hot pan, add melted butter and sauté mushrooms with tomato and pancetta. Chef Becky says you can also toss in spinach, peppers or artichoke hearts.
-Now, cook your favorite pasta.
At the restaurant, they add a lemon butter sauce to the mushroom topping. Then, they top the chicken and pasta with the topping.
Serving Suggestion: Pinot Grigio
