Bite with Belkys: Churrasco Salad from Bongo's Cuban Cafe

Ingredients for spice mix:

2 Tbs. of ground cumin
2 Tbs. of paprika
2 Tbs. of garlic powder
2 Tbs. of onion powder
2 Tbs. of cayenne pepper
2 Tbs. of guajillo powder or ancho chili
4 Tbs. of brown sugar
2 Tbs. of mustard powder
2 Tbs. of black pepper
2 Tbs. of white pepper

Method of Preparation:

-Combine all the spices together.

Ingredients:

6 oz. skirt steak
(parsley, minced garlic and olive oil for seasoning)
salt
2 Tbs. of spice mix
1 Tbs. of blended vegetable oil and olive oil
4 oz. of mixed greens
2 Tbs. of mango chimichurro
1 onion, cooked

Method of Preparation:

-Start by seasoning the skirt steak. At the restaurant, they season the meat with a combination of parsley, garlic and olive oil.

-Then, add a pinch of salt and the Bongo's spice mix.

-Next, pour a little blended oil in a hot pan and sear the steak. Once, the meat is ready let it sit a few minutes, and then cut it into strips.

-Now, move on to the salad. In a mixing bowl toss mixed greens with a little salt, mango chimichurri and cooked onions.

To Plate:

Begin by placing the salad. Then, add mango chimichurri, cherry tomatoes, hass avocados, the skirt steak, fired plantains, a little more chimichurri and a pinch of salt.

Serving Suggestion: Mojito
