Bite with Belkys: Steak and Mushroom Pie from The Kings Head Pub

The royal wedding is days away and as the historic menu still remains a secret, chefs here are planning their own royal menus and sharing a classic dish with us. Time to grab a Bite with Belkys.

The Dish: Steak and Mushroom Pie

Ingredients:
2 lb (8 oz) top sirloin meat, cut into 1 inch cubes
2 Tbs of extra virgin olive oil
8 oz onion, diced
2 garlic cloves, minced
1/2 pinch of dried thyme
1 pinch dried basil
1 pinch dried oregano
1/2 cup of red wine (sauvignon cabernet)
water
12 oz. of button mushroom, cut in 4 slices
4 oz. of veal glaze (gravy or reduced consommé)
4 oz of butter melted with 2 oz. of all-purpose flour (beurre manie)
4 drops of worcestershire sauce
2 drops of tabasco
salt, to taste
pepper, to taste
1 sheet of puff pastry
egg wash, as needed

Method of Preparation:
-Begin by cooking the chopped meat in a hot pan with a little extra virgin olive oil.

-Next, add onion, garlic, dried herbs and red wine. Stir it all together and let it cook a few minutes.

-Then, pour in some water. The chef says to add enough water for the beef to be covered thoroughly. Let this come to a boil, and then turn the heat down for it to simmer 1 1/2 hours.

-Once the meat is ready, add sautéed mushrooms, veal glaze, a melted butter and flour mixture (called beurre manie) and stir. This should cook for another five minutes.

-Now, add worcestershire sauce, tabasco, salt and pepper.

-Lastly, transfer the meat to a baking dish and cover it with a puff pastry. Make a few cuts on top of the puff pastry and brush it with an egg wash. (the egg wash is eggs whisked with a bit of water). Bake the pie in a 375 degree oven for about 20 minutes.

Serving Suggestion: Poor Man's Black Velvet (Cider topped with Guinness)
