Bite with Belkys: Dungeness Crab Roll from Eden South Beach
If you love hosting family and friends, then you know it's all about prepping your food ahead of time. So tonight, one local chef is showing us how to make a quick dish that's great to entertain.

The Restaurant: Eden South Beach
The Dish: Dungeness Crab Roll
8 oz. dungeness crab meat
3 Tbs of shallot, minced
2 Tbs of chives, minced
1/8 tsp of cayenne pepper
1/4 tsp of lemon zest
1 tsp of lemon juice
1 Tbs of creme fraiche
1/4 cup of mayonnaise
kosher salt, to taste
1 cucumber, slice razor thin with skin on (lengthwise)
Method of Preparation:
-Start by prepare the crab filling. In a bowl, combine crab meat with shallots, chives, cayenne pepper, lemon zest, lemon juice, creme fraiche, mayonnaise and a pinch of salt.
-Then, place the crab meat in a sheet of plastic wrap and shape it into a log. Make sure to chill the filling in the refrigerator for 20 minutes.
-Next, line up the cucumber slices and let them overlap a little. Place the crab filling over the cucumber slices and roll it up. Seal this in plastic wrap one more time and place it back in the fridge for another 10 to 20 minutes.
-To finish, slice the roll and remove the plastic wrap.
At the restaurant, they add their homemade passion fruit sauce and kahlua sauce on the side. You can garnish with salty/sweet macadamia nuts and toasted shaved coconut.
Serving Suggestion: Menage a Trois (White Wine)
