Bite with Belkys: Garbanzo Frito from Yiya's Gourmet Cuban Bakery and Cafe

A secret neighborhood gem getting rave reviews. And tonight, a South Florida chef prepares one of her most talked about dishes. Time to grab a Bite with Belkys.
The Chef: Mariana Hawayek
The Restaurant: Yiya's Gourmet Cuban Bakery and Cafe
The Dish: Garbanzo Frito
Ingredients:
1/4 Tbs of extra virgin olive oil
1 green pepper, chopped
1 red pepper, chopped
1/2 of a large onion, chopped
1 tsp of oregano
4 oz. of tomato, diced
4 garlic cloves, minced
1 tsp of cumin
salt, to taste
pepper, to taste
1/4 lb of chorizo (Spanish sausage), chopped
1/4 lb of chicken breast, chopped
1/4 lb of ham, chopped
1 cup of white cooking wine
16 oz. of garbanzo (chickpeas)
Method of Preparation:
-Begin by adding a little olive oil in a hot pot. Then, sauté green and red peppers, onion, oregano, tomato, garlic, cumin, and add a pinch of salt and pepper.
-Next, add chopped chorizo to the pan. Chorizo is a Spanish sausage. Also, add chopped chicken breast and ham. Pour in a cup of white cooking wine and mix it all together. Cover the pot and let it all cook through, for about 25 to 30 minutes.
-In the meantime, cook the garbanzo (chickpeas) in boiling water. Once the chickpeas are ready, add them to the covered pot and let it all cook for another 25 minutes. Make sure to keep the pot covered.
To Plate:
At the restaurant, they serve the garnanzo frito with white rice, tostones (fried plantains) and salad.
