Bite with Belkys: Sesame Crusted Honey Mustard Salmon from West Avenue Cafe

The Dish: Sesame Crusted Honey Mustard Salmon

Ingredients:

1 (7-8 oz) salmon filet
kosher salt, to taste
ground black pepper, to taste
1 tsp. of minced garlic with a little olive oil
1 tsp. of dijon mustard
2 Tbs of black and white sesame seeds
2 potatoes, peeled and cut
2 Tbs of margarine
one drop of soy milk

Method of Preparation:

-Start with the salmon. Season the fish with salt, pepper and minced garlic in olive oil over the top.

-Then, spread dijon mustard over the top of the salmon and coat that side in black and white sesame seeds.

-Sear the fish in a hot pan with olive oil for a few minutes on each side. Chef Moshe likes to finish cooking it in a 500 degree oven for about six to seven minutes.

-Next, prepare the mashed potatoes. First, cook the potatoes in boiling water.

-After, mash the potatoes in a bowl and combine it with margarine and soy milk. Season with a little salt.

To Plate:

Drizzle honey mustard on a plate and serve salmon on top. Place the mashed potatoes on the side. You can garnish with chopped parsley, a sprig of rosemary and lemon juice.

Serving Suggestion: Chardonnay
