Bite with Belkys: Fettuccine Romantico from Romantico Ristorante

All Bite with Belkys

Pasta is a favorite for many of us and you'll be amazed by how it was made back in the day in northern Italy. One local chef is bringing back the tradition in tonight's Bite with Belkys.

The Restaurant: Romantico Ristorante
The Dish: Fettuccine Romantico

Ingredients for Toppings:

1 portobello mushroom, sliced
1 chicken breast, sliced
4 (13/15) black tiger shrimp
1 cup of broccoli rabe
old bay seasoning, to taste
sea salt, to taste
ground black pepper, to taste
extra virgin olive oil

Method of Preparation:

-Season the topping of your choice with old bay seasoning, sea salt and black pepper. Then, sauté in a hot pan with a dab of extra virgin olive oil.

-For the broccoli rabe, first blanch it in boiling water and then sauté.

Ingredients for Fettucine:

8 oz. of fresh fettucine pasta, cooked
8 oz. of starched pasta water (left over water where the pasta was cooked)
4 oz. shaved grana padano
4 oz. grated grana padano
ground black pepper, to taste

Method of Preparation:

-First, add some of the left over pasta water to a hot pan. Make sure to keep the water boiling.

-Next, add the fettucine and the grana padano cheese. Toss it all together.

To Plate:

Season with a little black pepper and add with you favorite topping.

Serving Suggestion: Chianti
