Bite with Belkys: Pasta Carbonara from Il Corso Trattoria
A new restaurant in Coral Gables is getting great reviews. Tonight, we're meeting with the chef to learn how to make his signature dish. Time to grab a Bite with Belkys.

The Dish: Pasta Carbonara
2 Tbs. of olive oil
1/4 lb. of dried pancetta
1 shallot, thinly sliced
2 large garlic cloves, minced
4 oz. of white wine
2 Tbs. of unsalted butter
1 lb. of fresh linguini pasta
1/4 cup of baby spinach, julienned
salt, to taste
pepper, to taste
2 soft poached eggs
Method of Preparation:
-Start by making a sauce. In a hot pan, pour a little drizzle of love oil and sauté chopped pancetta. Pancetta is an Italian style bacon.
-Then, add in shallots, garlic, white wine and butter. Let the sauce reduce.
-Next, combine cooked linguini with the sauce.
-After, add spinach, salt and pepper.
You can place a pancetta chip in the center and finish with a poached egg. Then, add a hint of olive oil, salt, pepper and chopped parsley.
Serving Suggestion: Pinot Grigio
