Bite with Belkys: Pork Tenderloin from Trio on the Bay

All Bite with Belkys

If you like dining and parting all in the same spot, there's a new place where you can do it all. And the chef is showing us the secret to making one of his top dishes. Time to grab a Bite with Belkys.

The Chef: Klime Koveceski
The Restaurant: Trio on the Bay
The Dish: Pork Tenderloin

Ingredients:

1/2 lb of pork tenderloin
salt, to taste
pepper, to taste
2 Tbs. of all purpose flour
2 Tbs. of blended oil (half olive oil and half corn oil)
2 Tbs. of sherry vinegar
2 Tbs. of apple cider
1 Tbs. of fresh squeezed lime juice
2 Tbs. of butter
2 Tbs. of brown sugar
baked green apple slices (use 1/2 a green apple)

Method of Preparation:

-Start by seasoning the pork loin with salt and pepper. Then, coat it in all purpose flour and sear in a hot pan with a oil.

-Finish the pork by baking it in a 400 degree oven for about ten minutes. Once the pork is ready, make sure to let it rest before serving.

-Now, make a sauce. In a pan, reduce sherry wine vinegar with apple cider and lime juice. Thicken the sauce by adding butter.

-Lastly, add a little brown sugar to the sauce and stir it all together.

To Plate:

At the restaurant, they first serve a side of mashed potato. Then, slice the pork and place it around the plate. Next, add baked apple slices and top it with the sauce. You can garnish with a sprig of thyme.

Serves: 1
