Bite with Belkys: Risotto with a Grilled Veal Chop from Elle's Global Food & Drink

Cooking great food is all about adding your own personal touches. Tonight, we're learning how to do just that. Time to grab a Bite with Belkys.

The Dish: Risotto with a grilled veal chop

Ingredients for Veal Chop:

4 - 12 oz. veal chops
2 Tbs. of garlic, minced
1 Tbs. of fresh thyme, chopped
1 Tbs. of fresh parsley, chopped
1 Tbs. of fresh oregano, chopped
1 Tbs. of green onion, chopped
zest of 1 lemon
1/3 cup of extra virgin olive oil
salt and pepper, to taste

Method of Preparation:

-Begin by preparing an herb marinade. In a bowl, combine garlic, thyme, parsley, oregano, green onion, lemon zest and extra virgin olive oil.

-Then, marinate the veal chop overnight.

-Next, season the meat with salt and pepper and grill.

Ingredients for Risotto:

2 Tbs of extra virgin olive oil
3/4 cup of onion, diced
2 cloves of garlic, minced
2 oz. of pancetta
2 cups of arborio rice
1/2 cup of white wine
8 cups of chicken stock, warm
salt, to taste
4 oz. of feta cheese, crumbled
2 tsp of fresh mint, chiffonade

Method of Preparation:

-Now, move on to the risotto. In a hot pot, add extra virgin olive oil and sauté diced onion with a pinch of salt.

Then, add garlic and pancetta and keep sautéing. You can also use prosciutto or bacon.

-After, add the risotto (arborio) rice and sauté for a few minutes.

-Lastly, deglaze the pot with white wine and stir it all together. Once the rice starts to dry, pour in chicken stock and let it reduce. Make sure to keep stirring. Continue adding chicken stock when the rice starts to dry. Do this until the rice is fully cooked to your liking.

To Plate:

Start with the risotto and top it with feta cheese and mint. Then, place the veal chop over the rice. At the restaurant, they like to add a side of steamed asparagus.

Serves: 4
