Bite with Belkys: Mediterranean Chicken from Hot Tomatoe Italian Wine Bistro

Foodies always appreciate learning how to whip up a new meal tonight, a South Florida chef shows us what makes her chicken so great. Time to grab a Bite with Belkys.

The Dish: Mediterranean Chicken

Ingredients:

2 boneless chicken breasts
2 cups of all purpose flour
extra virgin olive oil
2 garlic cloves, minced
2 pepperoncini pepper
3 dried plums
4 dried apricots
2 red bell pepper, sliced
1/4 cup of white wine
1/4 cup of chicken stock
1 Tbs. of butter
1 tsp. of fresh basil
salt and pepper, taste

Method of Preparation:

-Begin by coating the chicken breast in all purpose flour.

-Then, sear the chicken in a hot pan with extra virgin olive oil. Once, the chicken turns a golden brown color remove it from the pan.

-In the same pan, sauté minced garlic and pepperoncini pepper. Pepperoncini pepper comes in a can. If you can't find it, you can use hot cherry pepper or leave it out.

-Next, add dried plums, dried apricot, red bell pepper and a shot of white wine. Let this cook for about two minutes.

-After, season with a pinch of salt and pepper, put the chicken breasts back in the pan and cook for a few more minutes.

-Then, add chicken stock, butter and finish with a little fresh basil.

To Plate:

Serve the chicken and top it with the sauce.

Serves: 1

Serving Suggestion: Pinot Grigio
