Bite with Belkys: Shrimp Chilaquiles from Tequila Sunrise Mexican Grill

There are just times you need a quick meal for the family. One local chef says from pot to plate, his shrimp dish takes ten minutes. Time for some speed cooking on A Bite with Belkys.

The Restaurant: Tequila Sunrise Mexican Grill
The Dish: Shrimp Chilaquiles
Ingredients:
1 Tbs of butter
2 tsp of garlic, minced
8 16/20 shrimp, peeled and deveined
1/2 tsp of mexican seasoning spice
2 oz. of monterey jack and cheddar cheese blend
3 corn tortilla, 6 inch size
1.5 oz. of sour cream
4 oz. of mexican style salsa
1/2 cup of mushroom, chopped
1/2 cup of onion, chopped
1/2 cup of red pepper
1/2 cup of green pepper
1/2 cup of corn
1/4 cup of peas
Method of Preparation:
-First, melt butter in a hot pan and sauté 1 teaspoon of minced garlic. Then, add shrimp and sprinkle with a mexican seasoning blend.
-Next, add shredded monterey jack and cheddar cheese over corn tortillas. Also, add sour cream and bake in a 350 degree oven for about five minutes.
-Then, add the cooked shrimp over the corn tortillas, more cheese, mexican salsa and stack the tortillas. Place another tortilla on top with more salsa and cheese.
-Chef Jaime also likes to make a side of veggies. He sautés garlic, mushroom, onion, red pepper, corn and peas. Then, seasons with a mexican spice.
To Plate:
At the restaurant, they add a side of rice, the veggies and shrimp chilaquiles. Then, heat up the plate for about three minutes and slice up the tortilla.
