Bite with Belkys: Grilled Bratwurst Sliders from PL8 Kitchen and Side Bar

Small plate selctions are becoming a trend at more restaurants. One chef shows us how to make a dish great for sharing. Time to grab a Bite with Belkys.

The Restaurant: PL8 Kitchen and Side Bar

The Dish: Grilled Bratwurst Sliders

Ingredients:

6 bratwurst

2 idaho potatoes, diced small

3 Tbs of red bell pepper, diced small

3 Tbs of white onion, diced small

2 Tbs of chives, diced small

1/2 cup of mayonnaise

1 Tbs of dijon mustard

1 tsp of kosher salt

1/4 tsp of pepper

1 bottle of beer

12 pretzel rolls

3 Tbs of clarified butter

Method of Preparation:

-Start by peeling and dicing the potatoes. Then, place them in a bowl of water to wash off some of the starch.

-Cook the potatoes in boiling water.

-Next, combine the potatoes with red pepper, white onion, chives, mayonnaise and dijon mustard. Season with kosher salt and pepper.

-Now, in a deep pot add your favorite beer and simmer the bratwurst for about 20 minutes. Then, cut them in half, slice lengthwise and grill.

-In the meantime, toast a few pretzel rolls. Chef Brandon likes to spread on a little clarified butter.

To Plate:

At the restaurant, they spread a violet mustard on the rolls. Then, place the bratwurst, the potato salad and top it with another piece of bread. Skewer this all in place.

Serves: 6
