Bite with Belkys: Grouper with White Truffle Cream of Wheat from Symcha's

It's time to get creative in the kitchen. One local chef is showing us how to use a healthy breakfast cereal in a gourmet dinner dish, and it's all for a good cause.

The Restaurant: Symcha's
The Dish: Florida Black Grouper with White Truffle Cream of Wheat

Ingredients:
1 lb. of Florida Black Grouper
salt and pepper, to taste
2 cups of white wine, (California Chardonnay)
10 sprigs of fresh thyme
3 Tbs of extra virgin olive oil
10 oz. of chicken stock
3 Tbs of cream of wheat
3 oz. of heavy cream
2 Tbs of white truffle butter (or use regular butter)
2 tsp of white truffle oil
3 Tbs of parmesan cheese, grated

Method of Preparation:

-Begin by seasoning the grouper with salt and pepper. Then, marinate the fish for 30 minutes in white wine and fresh thyme.

-Next, sear the grouper in a hot pan with a little extra virgin olive oil. Finish cooking it in the oven.

-For the cream of wheat, start by boiling some chicken stock. Then, slowly mix in the cream of wheat.

-After, fold in heavy cream. For extra flavor, Chef Joshua adds his homemade truffle butter, truffle oil, parmesan cheese, salt and pepper.

To Plate:

Place the grouper over the cream of wheat. At the restaurant, they also add a side of asparagus and garnish with diced peppers and micro greens.

Serves: 2
