Bite with Belkys: Artichoke Soup from Villa Mayfair
Coconut Grove welcoming a new intimate hot spot and we're learning how to make one of their most popular soups. Time to grab a Bite with Belkys."

The Dish: Artichoke Soup
1 Tbs. of butter
1 Tbs. of shallots, minced
3 baby artichokes
4 cups of chicken stock
salt and pepper, to taste
2 Tbs. of parmigiano reggiano cheese
2 Tbs. of black truffle shaving
1/2 Tbs of white truffle oil
1 white mushroom brioche
Method of Preparation:
-Start with a hot pot over medium heat. Cook butter and shallots for about two minutes.
-In the meantime, peel and cut baby artichoke. Then, add the artichoke to the shallots and cook for about seven to eight minutes.
-Next, add chicken stock and cook for another ten minutes. Season the soup with salt and pepper. Then, pour it into a blender and puree until its nice and creamy.
Top the soup with parmigiano reggiano cheese, black truffle shavings and a light drizzle of white truffle oil.
Serving Suggestion: Champagne pommery
