Bite with Belkys: Cedar Plank Salmon from Aizia

When it comes to cooking, it's more than just a feast for the stomach but a feast for the eyes today. One chef setting his sights on the sea. Time to grab a Bite with Belkys.

The Dish: Cedar Plank Salmon

Ingredients:

6 oz. salmon filet
1 roasted tomato
1/2 Tbs. of chipotle paste
1 Tbs. of tamarind paste
1/2 Tbs. of garlic
1/2 Tbs. of ginger
1/2 cup of brown sugar
1 Tbs. of sherry vinegar
salt, to taste
pepper, to taste
blended vegetable oil

Method of Preparation:

-Begin by making a sauce. In a blender, add roasted tomato. Chef Mauricio says you can roast a tomato by drizzling it with olive oil, salt, pepper and baking for about eight to ten minutes.

-Then, add chipotle paste, tamarind paste, garlic, ginger, brown sugar, sherry vinegar and season with salt and pepper. Blend this all together. If you don't have time, you can simply use your favorite barbecue sauce.

-Next, season the salmon with salt and pepper. Sear it in a cast iron pan with a little blended vegetable oil.

-Now, place the salmon on a cedar plank, drizzle it with the sauce and bake it in a 500 degree oven for about three minutes. You can find cedar planks at local home stores.

To Plate:

At the restaurant, they serve it with a side of noodles and present it with the cedar plank in flames.
