Bite with Belkys: Branzino with Green Beans from Vesper American Brasserie

All Bite with Belkys

Sometimes the simplest recipes can be the most tasty. Tonight, one South Florida chef showing us how with his signature fish dish. Let's grab a Bite with Belkys.

The Restaurant: Vesper American Brasserie
The Dish: Branzino with Green Beans

Ingredients:

5-6 oz. filet of branzino
3 Tbs. of extra virgin olive oil
1/2 a shallot, minced
2 garlic cloves, minced
10 peppercorns
2 bay leaves
4 stems of fresh thyme
1/2 cup of brandy
juice of 1 orange
juice of 1 lemon juice
1/2 cup of champagne
1/2 cup of heavy cream
2 Tbs. of butter
green beans
salt and pepper, to taste

Method of Preparation:

-In a hot pan with extra virgin olive oil, sauté shallots, garlic, peppercorns, bay leaf, thyme and a shot of brandy. Let this reduce.

-Then, add orange juice, lemon juice, champagne and a little heavy cream. Strain the sauce and place back in the pan over low heat. After, slowly whisk in soft butter.

-Now, season the branzino with salt and pepper and grill. Finish the fish in a 400 degree oven for about three minutes.

-Lastly, prepare some vegetables. Chef Frank sautés garlic with green beans. Season with a pinch of salt and pepper.

To Plate:

Start with the green beans, place the fish on top and drizzle the sauce all around. You can garnish with a little salad.

Serves: 1
