Bite with Belkys: Lobster with Coconut Lime Risotto from Little Palm Island
Our spring break Bite with Belkys continues in a place that looks like paradise and is very close to home. A chef makes lobster at one of the most secluded and romantic retreats in Florida. Time to Grab a Bite.

The Restaurant: Little Palm Island (Little Torch Key, Florida Keys)
The Dish: Lobster with coconut lime risotto
1 cup of clarified butter
1/2 cup of white onion, diced
salt, to taste
pepper, to taste
2 Tbs. of fresh thyme
2 Tbs. of crystalized ginger, minced
1 1/4 cup of arborio rice
3 cups of coconut milk
1 Tbs. of lime zest
juice of 1 lime
1/3 cup of mascarpone cheese
1 bunch of fresh basil leaves
1 black truffle
1/4 tsp. of truffle oil
Method of Preparation:
-Begin with the risotto. In a hot pot, sauté onion with a little clarified butter. Then, season with salt, pepper, fresh thyme and crystalized ginger. Chef Alex says crystalized ginger is also known as candied ginger and is available at most grocery store at the Asian section.
-Next, mix in arborio rice and let it toast lightly.
-Then, pour in enough coconut milk to cover the rice. Stir as it cooks. Once the liquid comes to a boil reduce it to a low heat.
-When the rice starts absorbing most of the liquid, again add enough coconut milk to cover it and stir. Let it cook down a little more. The rice should have a very slight crunch.
-Lastly, stir in a little lime zest, lime juice, salt, pepper and mascarpone cheese.
-Now, for the lobster. First, separate the tail from the head and remove the shell.
-Make sure to season with a little salt and pepper. Then, cook the lobster in a hot pan with clarified butter. Chef Alex likes to tilt the pan a little and baste the lobster with the butter as it cooks.
At the restaurant, they serve the coconut lime risotto and place the lobster on top. They finish with a basil and truffle salad.
