Bite with Belkys: Fish Tacos from Raw Bar (Holiday Isle, Florida Keys)

If you're looking for a quick getaway from home this spring break, look no more. This week, we are taking you to some of the local favorites in the Florida Keys, and the chef there is showing us how to make a quick family-friendly meal.

The Dish: Fish Tacos with The Rumrunner from the world famous Tiki Bar
Ingredients for Fish Tacos:
2 (6 oz. ) mahi mahi filet, cut into 1/3
6 corn taco shells
1 cup of pineapple, diced
1/2 cup of red pepper, diced
1/2 cup of red onion, chopped
2 Tbs of lime juice
2 tsp of sugar
1 tsp of sea salt
1 tsp of ground black pepper
1 pinch of red pepper flakes
2 oz. of melted butter
2 Tbs of blackening spice
1/2 cup of shredded lettuce
1/4 cup of tomato, chopped
Method of Preparation:
-Start by making a pineapple relish. In a bowl, combine chopped pineapple, red pepper, red onion, lime juice, sugar, pepper, sea salt and a little red pepper flakes. Lastly, toss in some cilantro. Chef Paul says you can also make this salsa with mango and black beans.
-Next, drizzle a little melted butter or a butter substitute over thin slices of mahi mahi.
-After, season the fish with a blackening spice and cook for about two minutes.
-In the meantime, heat up taco shells in the oven until they are a nice golden brown.
To Plate:
Place the fish inside the taco shells and top it with shredded lettuce and chopped tomato. You can garnish with a wedge of lime. At the restaurant, they also serve a side of rice and black beans, sour cream, guacamole, salsa and the pineapple relish.

Ingredients for Rumrunner:
1/2 oz. of Bacardi Select dark rum
1/2 oz. of Bacardi 151
1 oz. of Blackberry Brandy
1 oz. of Banana liquor
1 oz. of Grenadine
1/2 oz. of Lime juice
Method of Preparation:
-In a cup with ice combine all the ingredients. Then, mix it in a blender and finish with a dark rum shooter.
Serves: 1
