Bite with Belkys: Strozzapreti Carbonara from Ten Palms (Gulfstream Park)
Good food and entertainment make for a perfect night out. Tonight, we're stopping by a South Florida hot spot where you can dine and see horse racing. Let's see what's cooking on a Bite with Belkys.
The Chef: Ralph Pagano
The Restaurant: Ten Palms (Gulfstream Park)
The Dish: Strozzapreti Carbonara
1 lb. of strozzapreti pasta
2 Tbs. of extra virgin olive oil
1/2 lb. of pancetta, diced1 spanish onion, julienne
1 qt. of chicken stock
1 handful of fresh parsley, chopped
1 cup of parmesan cheese, grated
2 Tbs. of unsalted butter
Method of Preparation:
-Start by adding a little extra virgin olive oil in a hot pan. Then, add rendered out pancetta and onion.
-Next, pour in chicken stock and let it reduce.
-In the meantime, poach an egg in hot water with a dash of vinegar.
-After, add the cooked strozzapreti pasta and toss.
-To finish, toss in a little fresh parsley, grated parmesan cheese and butter.
Top the dish with the poached egg, a drizzle of extra virgin olive oil and chopped parsley.
Serving Suggestion: Italian Sangria
