Bite with Belkys: Asian Noodle Salad from Crave Restaurant
Salads don't need to be bland and boring. Tonight, one chef shows you how to satisfy your craving with a little Asian flair. Time to grab a Bite with Belkys.

The Restaurant: Crave at the Village of Merrick Park
The Dish: Asian Noodle Salad
6 oz. of chicken breast, sliced in small pieces
2 Tbs. of cooking oil
salt, to taste
pepper, to taste
onion powder, to taste
garlic powder, to taste
1 oz. of garlic, minced
1/2 oz. of ginger, minced
1 oz. of a spicy asian dressing
1/2 oz. of carrots, julienne
1 oz. of rice noodles
1 oz. of napa cabbage slaw
1/2 oz. of mandarin oranges
1/2 oz. of fresh basil
1 oz. of an asian vinaigrette
1/2 oz. of toasted almonds
1/4 oz. of sesame seeds
1/2 oz. of scallions
1 oz. of bean sprouts
1/2 oz. of cilantro
1 Wonton Triangle
Method of Preparation:
-Start by cooking sliced chicken breast in a hot pan with a little oil. Season the chicken with salt, pepper, onion powder ad garlic powder.
-Once it starts to get a little golden, add minced garlic and ginger.
-Next, pour in a dab of spicy asian dressing and toss in some carrots.
-In the meantime, start to cook rice noodles in boiling water. Then, strain and place in a bowl.
-To the noodles, add napa cabbage slaw, mandarin oranges, fresh basil and a little drizzle of an asian vinaigrette. Mix it all together.
Serve the salad, the chicken and some of the remaining juices. Top it with toasted almonds, sesame seeds, scallions, bean sprouts and cilantro. You can garnish with a wanton chip.
