Bite with Belkys: Guava Glazed Cod from The Dome Restaurant Bar & Lounge

Simple recipes make cooking fun, and one local chef is showing us one of her favorites it combines Latin flavors with a sweet touch. Time to grab a Bite with Belkys.

The Dish: Guava Glazed Cod

Ingredients:

8 oz. black cod
1/4 of a red pepper, diced
2 Tbs. of red onion, chopped
1 Tbs. of extra virgin olive oil
2 Tbs. of balsamic vinegar
salt and pepper, to taste
1 pinch of fresh parsley, chopped
4 Tbs. of guava jam or marmalade
1/2 cup of pistachio bread crumb mix

Method of Preparation:

-Begin by making a red pepper salsa. In a bow, add diced red pepper, red onion, extra virgin olive oil, balsamic vinegar and a pinch of salt and pepper. Then, sprinkle in some fresh parsley and mix it all together. Let it sit for about ten minutes.

-Then, season the fish with salt and pepper. Dip it in the guava jam or marmalade and coat it with pistachio bread crumbs. You can prepare the bread crumbs by toasting and grinding pistachios. Then, mix the pistachios with italian seasoned bread crumbs. Chef Marsha likes to use a ratio of more pistachios than bread crumbs.

-Next, bake the cod in a 375 degree oven for about six to seven minutes.

To plate:

At the restaurant they, serve congri (white rice mixed with black beans) and place the fish on top. Then, finish with the red pepper salsa and chopped parsley.

Serving Suggestion: Rosé Champagne
