Bite with Belkys: Stuffed Portobello from Sorrisi at the Seminole Casino Coconut Creek

They say the best way to a man's heart is through his stomach. So a South Florida chef heats things up with an appetizer. Time to grab a Bite with Belkys.

The Dish: Stuffed Portobello
Ingredients:
4 portobello mushrooms
extra virgin olive oil
2 Tbs. of pesto, to taste
2 Tbs. of basil pesto
1 can of jumbo lump crab meat
2 Tbs. of yellow pepper, diced
2 Tbs. of red pepper, diced
1 Tbs. of chorizo, chopped
2 Tbs. of onion, diced
1 tsp. of fresh Italian parsley, chopped fine
2 Tbs. of Italian bread crumbs
salt, to taste
pepper, to taste
4 Tbs. of parmesan cheese
1/2 tsp. of worcestershire sauce
1/2 tsp. of tabasco
1/4 cup of mayonnaise
1 whole egg
1/2 cup of mozzarella, shredded
1/2 cup of marinara sauce
1 cup of fresh baby arugula
1 tsp of balsamic reduction
Method of Preparation:
-Begin by peeling portobello mushrooms. Then, remove the steams and the gills.
-Add a little extra virgin olive oil to a cast iron pan and place the mushrooms. Season with salt and pepper and spread pesto over the top.
-Bake the mushrooms in a 350 degree oven for about ten to fifteen minutes.
-In the meantime, prepare a stuffing mix. In a bowl, add jumbo lump crab meat, yellow pepper, red pepper, chorizo, onion, parsley, bread crumbs, salt, pepper and parmesan cheese. Next, add worcestershire sauce, tabasco, mayonnaise and egg. Mix this all together.
-Once the mushrooms are ready, top them with the crab stuffing and shredded mozzarella. Bake for another ten minutes.
To plate:
At the restaurant, they first serve baby arugula. Then, place the portobello mushroom on top with marinara sauce. You can garnish with a drizzle of balsamic reduction and extra virgin olive oil.
