Bite with Belkys: Cuban Coffee Crusted Rib Eye from Asia de Cuba

If you need more than coffee for your caffine fix, how about a juicy steak? One local chef is jazzing up his dishes with Cuban coffee and its quickly becoming one of his most popular dishes. Time to grab a Bite with Belkys.

The Dish: Cuban Coffee Crusted Rib Eye

Ingredients for Papaya Marinade:

1 cup of papaya puree
2 Tbs of papaya juice
3/4 cup of soy sauce
4 Tbs. of honey
3 Tbs. of rice wine vinegar
1 Tbs. of ginger
1 Tbs. of garlic, minced
salt, to taste

Method of Preparation:

-Simply blend all the ingredients together until it is nice and smooth.

Ingredients for Coffee Crust

4 Tbs. of Cuban instant coffee
4 Tbs. of ground coffee
1/2 cup of brown sugar
1/2 cup of cracked black pepper

Method of Preparation:

-Combine all of the ingredients.

 Ingredients for Cuban Coffee Crusted Rib Eye

2 24oz. bone in rib eye
1 cup of the papaya marinade
1/2 cup of the coffee crust
4 Tbs. of sherry flavored butter
10 oz. of yucca fries
4 Tbs. of mojo

Method of Preparation:

-Start by marinating the rib eye in the papaya puree for up to 12 hours.

-Then, wipe the marinade off the meat and season it with kosher salt.

-Next, coat the rib eye in the coffee crust seasoning and grill for a few minutes, just to sear the outside. Then, transfer it to a baking rack and cook in a 400 degree oven for about 8 to 12 minutes.

-Once the meat is ready, carefully remove the bone and slice it into strips. Next, assemble it back and place it on the baking rack. Add a little butter on the top and let it broil until the butter is all melted. At the restaurant, they use a sherry flavored butter.

-Lastly, deep fry yucca and then, toss it with a mojo mix. Mojo is a combination of extra virgin olive oil, shallots, garlic, lime juice, cilantro, shiso leaf and parsley. You can purchase it already made.

To plate:

Serve steak with the yucca fries on the side.

Serving Suggestion: Cabernet Sauvignon
