The Dish: Pork Chop with Apple Chutney
Ingredients for Pork Chop:
8-10 (12 oz.) pork chops
3 bottles of apple flavored beer
1/4 cup of strong dijon mustard
1/2 cup of apple cider vinegar
2 Tbs. of fresh thyme
4 cloves of garlic, minced
3 Tbs. of honey
1 shallot, chopped
smoked bourbon sea salt, to taste
pepper, to taste
Method of Preparation:
-Begin by making a marinade. In a bowl, add apple flavored beer, dijon mustard, apple cider vinegar, thyme, garlic, honey, shallot, salt and pepper. Whisk this all together.
-Now, marinate the pork chop for 6 to 24 hours. Chef Shannon recommends 24 hours for the best taste.
-Then, grill the pork chop over medium heat.
Ingredients for Apple Chutney:
6 Tbs. of of Irish cream butter
1 small onion, diced
6 granny smith apples, chopped
12 oz. apple flavored beer
3/4 cup of light brown sugar
1/2 tsp. of cinnamon
1/4 tsp. of all spice
1/4 tsp. of clove
1/4 tsp. of nutmeg
1 lb. of raisins
Method of Preparation:
-In a hot pan, add Irish cream butter and saute diced onion.
-Then, add granny smith apple and apple flavored beer and let it reduce by half.
-Next, add light brown sugar, cinnamon, all spice, clove, nutmeg and raisins. Mix it all together. Let it reduce again, until the apples are nice and soft.
To plate:
At the restaurant, they serve garlic mashed potatoes and artichoke first. Then, place the pork chop on top and finish with the apple chutney sauce. You can garnish with fresh thyme.
