The Dish: Chicken Satay
Ingredients for Peanut Sauce:
1 Tbs of sesame oil
1/2 tsp of ginger root, minced
1 clove of garlic, minced
1/3 cup of coconut milk
salt, to taste
pepper, to taste
1/4 cup of creamy peanut butter
Method of Preparation:
-In a deep pot, add a little sesame oil and sauté ginger and garlic. Then, pour in coconut milk. Season with a pinch of salt and pepper.
-Next, add creamy peanut butter and whisk it together. Let it reduce.
Ingredients for Chicken Satay:
6 oz. of chicken breast, diced
1 Tbs of sesame oil
salt, to taste
pepper, to taste
1 Tbs of peanuts, chopped
1/2 tsp of red chili pepper, chopped
1/2 tsp of ginger
1 cup of napa cabbage, rough chopped
1/4 cup of carrot, julienne
1/4 cup of shiitake mushrooms, cut in strips
1/4 cup of snow peas
2 oz. of peanut sauce
2 oz. of chicken stock
Method of Preparation:
-To start, marinate the chicken with a little ginger, garlic and sesame oil for at least six hours. Then, cook the chicken in a hot pan with sesame oil.
-Season with salt and pepper.
-Next, toss in chopped peanuts, red chili pepper, ginger, the julienne vegetables, and mix it all together.
-After, add the peanut sauce and chicken stock and let it reduce.
To plate:
At the restaurant, they serve the chicken satay with a side of white rice.
