Bite with Belkys: Penne Pasta With Beef Bolognese from Chef Oliver Saucy - Cooking without power

Tomorrow is the start of hurricane season and you don't have to be powerless when it comes to eating a good meal. Time to grab a Bite with Belkys.

The Chef: Oliver Saucy
The Restaurant: Cafe Maxx
The Dish: Penne Pasta with Beef Bolognese

(Not served at the restaurant.  This is a cooking without power hurricane special)

Ingredients:
1 lb. of penne pasta (or other available pasta)
1-2 Tbs of extra virgin olive oil
3-4 lbs. of ground meat
1-2 Italian sausage links, removed from casings, optional
6-8 cloves of garlic, chopped
1 medium onion, minced
1-2 Tbs. of fresh parsley, chopped (can substitute with fresh basil)
1/4 cup of red wine
1 1/2 qt. of tomato sauce
salt, to taste
pepper, to taste
parmesan cheese as desired, grated

Method of Preparation:

-Before the storm hits, cook penne pasta in boiling water. Then, drain and store in your fridge.

-After the storm, if you have lost power use a gas grill or butane burner to reheat the pasta.  Drizzle it with a little extra virgin olive oil.

-Next, cook ground beef and sausage in a hot pan. Make sure to add chopped garlic, onion, parsley, salt and pepper.

-Then, deglaze the meat with some red wine.  

-After, add tomato sauce and let it reduce. Stew the meat until it is nice and tender. It will take about 30-45 minutes.


To plate:
Top the pasta with the beef bolognese and add a little grated parmesan cheese.


Serves: 4-6
