If you've been craving red meat, one local restaurant is serving it up with a special sauce. It's time to grab A Bite with Belkys.
The Chef: Chris Blum
The Restaurant: Piazzetta
The Dish: Grilled New York Strip
Ingredients for New York Strip Steak:
1 (about 1-inch thick) new york strip steak
1 bunch of fresh thyme, chopped
1 bunch of fresh rosemary, chopped
2 Tbs of extra virgin olive oil
salt, to taste
pepper, to taste
Ingredients for Mushroom Topping:
2 Tbs of olive oil
1/2 tsp of garlic, chopped
1/2 tsp of shallots, chopped
1/2 tsp of fresh rosemary, chopped
1 cup of portobello mushrooms, sliced
1 cup of red wine
1/4 cup of beef stock
1/2 cup of porcini mushroom, sliced
4 Tbs of demi glace
Method of Preparation:
-Begin by marinating the steak. Chef Chris likes to marinate the meat in fresh thyme, rosemary, extra virgin olive oil, salt and pepper for at least one hour.
-Then, grill the steak for nine to ten minutes for medium rare to medium, depending on the heat.
-Next, prepare a topping. In a hot pan with a little olive oil, add minced garlic, shallots, fresh rosemary and portobello mushrooms. Let it sauté until the mushrooms start to sweat.
-After, pour in a dash of red wine. Chef Chris recommends cabernet or merlot. Mix it all together and let it reduce by half.
-Then, add beef stock and porcini mushrooms. Stir it all together.
To plate:
Top the steak with hot demi glace and garnish with a sprig of rosemary.
