The Dish: Pork loin with ginger apples

Ingredients for pork loin:

8 oz. pork loin

salt, to taste

1/2 cup of cilantro powder

white pepper, to taste

2 Tbs of oil

1 Tbs of butter

Ingredients for wine sauce:

2 Tbs of butter

1/4 of a red onion, cut in petals

3 bay leaves

1 cup of red cooking wine

2 tsp of sugar

1 cup of heavy cream

1/3 cup of vermouth rosso liquor

Ingredients for ginger apples:

2 Tbs of butter

3 Tbs of yellow onion, diced

1 cup of golden apples, diced into cubes

1 tsp of ginger powder

1 tsp of cilantro powder

salt, to taste

2 tsp of sugar

1/3 cup of white wine

Method of Preparation:

-Start by seasoning the pork loin with salt, cilantro powder and white pepper. Then, cut the meat to your desired serving portions.

-In a hot pan, add a little oil and butter and sear the pork loin on all sides.

-Finish cooking the meat in a 350 degree oven for about 15 minutes or ti your desired temperature.

-Next, prepare a wine sauce. First, melt butter in a deep pot. Then, sauté red onion and bay leaf.

-After, deglaze it with red cooking wine and let it reduce by half. Add a little sugar and heavy cream and let it reduce again. Mix it all together. Lastly, add a dash of vermouth rosso liquor.

-Now, move on to the ginger apples. Begin by sautéing onion in melted butter. Then, toss in diced apples, ginger powder, cilantro powder, salt and sugar. Deglaze it with a shot of white wine.

To plate:

Serve the pork loin next to the ginger apples. Top it with the wine sauce. At the restaurant, they garnish with paprika oil and a balsamic reduction.

Serves: 1

Serving Suggestion: Pinot Noir

Note:
