Bite with Belkys: Matzo Ball Soup from Josh's Delicatessen and Appetizing

Some believe matzoh ball soup can do wonders for a cold. A South Florida chef showing us how to make his award winning recipe. Time to grab a Bite with Belkys.

The Dish: Matzo Ball Soup

Ingredients:

6 Tbs. of duck fat (can substitute chicken fat)
1 small red onion, diced
5 pieces of whole matzo
1/4 cup of chicken stock
1/4 cup of ginger beer
5 stalks of fresh parsley, rough chopped
1 sprig of fresh dill, rough chopped
4 egg whites, beaten until foamy
4 egg yolks, beaten
1 tsp of baking powder
salt, to taste
pepper, to taste
1 cup of matzo meal
cooked noodles
cooked chicken, shredded
chicken broth for soup

Method of Preparation:

-In a hot pan, add duck fat or you can use chicken schmaltz (chicken fat). Chef Josh says if you want to be a bit healthier, you can try vegetable oil or soy bean oil, but it will change the flavor.

-Then, carefully toss in red onion and let it cook a bit.

-In the meantime, crush whole matzo into small pieces and put it in a bowl. Pour in chicken stock and ginger beer, mix it all together and let it all absorb.

-After, mix in the cooked red onions, fresh parsley and dill.

-Next, beat eggs whites until it is foamy and add it to the mix. Also, add beaten egg yolk, baking powder, salt, pepper and matzo meal.

-Let it sit in the refrigerator for at least two hours. Then, you will be left with a dough like consistency.

-Now, shape the matzo into balls and cook in simmering water. Once the matzo balls are ready, they will float to the top of the water.

To plate:

In a bowl, add one matzo ball, noodles, chicken, chicken broth and a little parsley.
