Bite with Belkys: Arroz Baru (Baru Rice) from Barú Urbano

All Bite with Belkys

A South Florida city rolling out all kinds of restaurant specials this month. And one chef revealing one of his favorite recipes. Time to grab a Bite with Belkys.

The Chef: Javier Cano
The Restaurant: Barú Urbano in Doral
The Dish: Arroz Baru

Ingredients for chicken:

1 chicken breast
1 cup of plain yogurt
juice of 2 limes
1 tsp. of nutmeg
1 tsp. of cinnamon
1 tsp. of clove
1 tsp. of mustard
1 tsp. of turmeric powder
1 tsp. of horseradish
1 tsp. of ginger powder
1 tsp. of chipotle

Ingredients for rice:

1 cup of jasmine rice
2 Tbs of extra virgin olive oil
1/2 of a yellow onion
4 oz. of mixed peppers (red, green and yellow)
1 tsp. of nutmeg
1 tsp. of turmeric powder
2 cups of chicken broth

Method of Preparation:

-Start by preparing the marinade. In a bowl, add yogurt, lime juice, nutmeg, cinnamon, mustard, turmeric powder, horseradish, ginger powder and chipotle. Whisk this all together. Marinate the chicken for one to two hours.

-Then, cook the chicken in a hot pan with olive oil. Once its ready, slice it into strips.

-Moving on to the rice, in a pot sauté onion, mixed peppers and jasmine rice with a little extra virgin olive oil.

-Next, add nutmeg, turmeric powder and chicken broth. Cover the pot and cook for about seven minutes. Then, stir it all together.

To plate:

Top the rice with the chicken and garnish with sliced tomatoes, green onions and a chipotle sauce.

Serves: 2
