Bite with Belkys: Mahi Mahi with Mango Salsa from Whisk Gourmet Food and Catering
If you have a mango tree in your backyard, it's probably growing more mangoes than you know what to do with. One chef showing us a quick and easy recipe you're going to love. Time to grab a Bite with Belkys.
The Restaurant: Whisk Gourmet Food and Catering
The Dish: Mahi Mahi with Mango Salsa
Ingredients for Mango Salsa:
4 large, ripe mangos, diced in small cubes
1/2 cup of red onion, diced in small cubes
1/2 cup of red pepper, diced in small cubes
1/2 bunch of fresh cilantro, rough chop
juice of 1 lime
1 tsp. of chopped garlic
2 Tbs. of extra virgin olive oil
1 small jalapeno pepper, diced
Ingredients for Mahi Mahi:
4 mahi mahi filets
salt, to taste
2 Tbs of oil
4 fingerling potatoes, cleaned and blanched
zest of 1/2 a lemon
juice of 1/2 a lemon
1-2 Tbs of butter
8 spears of asparagus per person, blanched
Method of Preparation:
-Start by making the mango salsa. In a bowl, add mango, red onion, red pepper, fresh cilantro, lime juice, garlic and extra virgin olive oil. Carefully mix it all together. If you like it a little hot, toss in some chopped jalapeno pepper.
-You can also serve the mango salsa over chicken or simply with chips.
-Now, season the fish with salt and pepper and grill.
-Then, chef Brendan likes to prepare a side of vegetables. In a hot pan with a little oil, sauté blanched fingerling potatoes and add lemon zest, salt, pepper and lemon juice. Toss it all together.
-In a separate pan, melt some butter and sear blanched asparagus. Season with a pinch of salt and pepper.
Serve the potatoes and the asparagus. Then, lean to fish on the side and top it with the mango salsa.
Serving Suggestion: Gruner Veltliner (white wine)
