Bite with Belkys: Sweet and Spicy Halibut from Truluck's

Get ready to turn up the heat. One chef is showing us how to make a sweet and spicy fish dish. Time to brab a Bite with Belkys.

The Chef: Samir Canaan
The Restaurant: Truluck's Seafood, Steak and Crab House
The Dish: Sweet & Spicy Halibut

Ingredients:

8 oz. halibut filet
salt, to taste
pepper, to taste
1.5 Tbs. of olive oil
1/2 Tbs. of butter
3 oz. of baby heirloom tomatoes, cut in half
1/2 of a hass avocado, cut in small cubes
1 oz. of jumbo lump crab
2 Tbs. of sweet thai chili
1/4 tsp. of chives, thinly sliced
1 tsp. of cilantro, chiffonade
1/2 of a jalapeño pepper, thinly sliced

Method of Preparation:

-Begin by preparing the halibut. Season the fish filet with salt and pepper. Then, sear it in a hot pan with a little olive oil.

-Give the fish a swirl to make sure it does not stick to the pan. When it is almost ready, baste it with the juices in the pan.

-Next, add a little butter over the top and bake in a 450 degree oven for about two minutes.

-Now, move on to the topping. In a bowl, add heirloom tomatoes, avocado and jumbo lump crab. Then, drizzle it with a sweet thai chili sauce. Also, add chives, cilantro and jalapeno pepper. Season it with salt and pepper and toss it all together.

To plate:

At the restaurant, they serve a side of rice pilaf and drizzle the rim of the plate with sweet thai chili sauce. You can garnish with half a lemon and a sprig of cilantro.

Serves: 1
