Bite with Belkys: Yaki Beef from Aijó Brickell

A South Florida chef spices things up in the kitchen. He's preparing a Japanese dish with a Latin kick. Time to grab a Bite with Belkys.
The Chef: Maykel Bareas
The Restaurant: Aijó Brickell (at the Jade Building)
The Dish: Yaki Beef
Ingredients for Yaki Beef:
8 oz. beef tenderloin
salt and pepper, to taste
4 tsp. of brown sugar
1 tsp. of cayenne pepper
1/2 cup of soy sauce
1/2 cup of sweet soy sauce
2 tsp garlic, chopped (optional)
Method of Preparation:
-Start by seasoning the meat with salt and pepper. Then, grill it to your favorite temperature.
-Next, prepare a sauce. In a hot pot, caramelize brown sugar and cayenne pepper. Then, pour in soy sauce and sweet soy sauce. You can also add chopped garlic. Stir it all together.
-Now, place the meat inside the sauce and let it marinate there for 15 minutes.
-After, place the tenderloin back on the grill and cook to your desired temperature.
Ingredients for Salad:
1 Tbs of sesame oil
1 carrot, julian
1 cup of cabbage, julian
2 leeks, julian
1 red pepper, julian
1/4 white onion, julian
1 Tbs. of butter
2 Tbs. of soy sauce, or as desired
salt and pepper, to taste
Method of Preparation:
-In a hot pan with a little sesame oil, saute carrots, cabbage, leeks, red pepper and onion. Then, add butter, salt, pepper and soy sauce and toss.
To plate:
Begin with a bed of salad and then serve the yaki beef. Drizzle the meat with some of the left over sauce and garnish with fried leeks and microgreens.
