Bite with Belkys: Seafood Stuffed Pepper from Casa Maya Grill

Seafood lovers, get ready to cross the border. A chef is adding some spice to the dinner table. Let's grab a Bite with Belkys.

The Dish: Seafood Stuffed Pepper (Chiles Rellenos de Mariscos)

Ingredients:

4 large poblano peppers
vegetable oil (to fry)
2 Tbs. of olive oil
2 cloves of garlic, minced
1/4 cup of onion, chopped
12 oz. of mahi mahi, cut in bite sized pieces
4 large shrimp, cleaned and deveined, tails removed and cut in bite size pieces
salt and pepper, to taste
1 splash of white wine
2 cups of tomato, chopped
2 oz. of chihuahua cheese

Method of Preparation:

-Start by deep frying poblano peppers for about three minutes. Then, place the pepper inside a plastic bag and close it. Let the pepper sweat inside the bag for about 10 to 15 minutes.

-Next, peel the skin off the pepper, open it on one side and remove the seeds and vein.

-Now, prepare the seafood stuffing. In a hot pan with a little olive oil, sauté garlic, onion, mahi mahi and shrimp. Season with salt and black pepper. After, pour in some white wine and add chopped tomato. Let it cook on low heat.

-Lastly, stuff the pepper and close it carefully. Top it with a slice of chihuahua cheese or mozzarella and let it broil a few minutes.

To plate:

Serve the stuffed pepper over some rice and top it with the remaining seafood. You can garnish with a little chopped cilantro.
