Bite with Belkys: Bacon wrapped filet mignon kabob from the Front Porch Cafe

The Dish: Bacon Wrapped Filet Mignon Kabob

Ingredients for Kabobs:

8 oz. of filet mignon
4 strips of bacon
6 shiitake mushrooms, caps only
1 red pepper, cut into 1" squares
1 red onion, cut into 1" squares
2 Tbs. of fresh Italian flat leaf parsley, chopped
2 Tbs. of fresh rosemary, chopped
2 Tbs. of thyme, chopped
2 Tbs. of fresh oregano, chopped (dry will work if fresh is not available)
1 Tbs. of garlic, minced
1/2 cup of olive oil

Ingredients for Orzo Salad:

1 box of orzo pasta, cooked
2 oz. of kalamata olives, pitted and cut in half
2 oz. of tomato, diced
2 oz. of cucumber, diced
2 oz. of red pepper, diced
2 oz. red onion, diced
salad dressing (juice of one lemon and 6 oz. of olive oil)
salt, to taste
pepper, to taste
tzatziki sauce (for garnish)

Method of Preparation:

-Begin by wrapping bite size pieces of filet mignon with bacon.

-Then, assemble the kabob. First, skewer the meat, shiitake mushroom, red pepper, red onion, and repeat one more time. Lastly, finish with another piece of meat.

-Next, marinate the kabob overnight or at for one hour at least. Chef Todd likes to marinate with fresh Italian, flat leaf parsley, fresh rosemary, thyme, oregano, garlic and olive oil. Once, it is ready the kabobs.

-After, prepare a salad. In a bowl, combine cooked orzo pasta, kalamata olives, tomato, cucumber, red pepper and red onion. Drizzle a little dressing. The dressing consist of one lemon and a few ounces of olive oil. Season the salad with salt and pepper.

To Plate:

Serve the salad and top it with the kabobs. You can garnish with tzatziki sauce on the side.
