Bite with Belkys: Greek Meatballs from Thasos Greek Taverna
A perfect party appetizer is fun and easy to make. A South Florida chef sharing his meatball recipe. Time to grab a Bite with Belkys.
The Restaurant: Thasos Greek Taverna
The Dish: Keftedes (Greek Meatballs)
4 oz. of pork, ground
8 oz. of veal, ground
16 oz. of lamb, ground
2 whole eggs
1 1/2 tsp of salt
1 tsp. of fresh ground black pepper
1 Tbs. of toasted cumin seeds, ground
1 bunch of fresh parsley
1 bunch of green onion, chopped
1/2 of a white onion, diced small
3/4 cup of panko bread crumbs
1/4 cup of extra virgin olive oil
6 oz. of crumbled feta cheese
Method of Preparation:
-In a bowl, combine ground pork, veal, lamb, egg, salt, pepper, cumin, parsley, green onion, white onion and panko bread crumbs.
-Then, add a little extra virgin olive oil and crumbled feta cheese. Fold it all together without breaking the feta too much.
-Next, form the meatballs and grill.
At the restaurant, they garnish with cured tomato, thyme, some of the cured tomato oil and whipped yogurt.
Serves: 35 (1.5 oz meatballs)
