Bite with Belkys: Garbanzo Spring Rolls from Zen Sai at the Essex House
A South Florida chef prepares an appetizer that's a big hit with party guests. And it includes a new superfood. Time to grab a Bite with Belkys.

The Dish: Garbanzo Spring Rolls
Ingredients for Garbanzo Spring Rolls:
1 (10 oz. bag) of green garbanzo beans
2-3 pinches of salt
2-3 pinches of black pepper
1/4 cup of white onion, chopped and sauteed
1 Tbs. of fresh cilantro, diced
2 Tbs. of grapeseed oil
1 pk of pastry paper (found in the produce section or at asian specialty markets)
2 Tbs. of water with 1 Tbs of all purpose flour
oil (to deep fry)
Ingredients for Cilantro Curry Sauce:
1/4 cup of sour cream
1/2 white onion, chopped
1 Tsp of curry powder
2 pinches of salt
1/2 tsp of black pepper
1 Tbs. of soy sauce
2 Tbs. of yuzo juice
1 Tbs. of fresh cilantro
1/2 tsp. of chili powder
Japanese mayonnaise (or vegenaise)
Method of Preparation:
-Begin by cooking frozen green garbanzo beans in a pot of boiling water. Chef Mike cooks them for 45 minutes, until the beans are very soft. You can find the green garbanzos in a bag at the frozen section of some local supermarkets.
-Then, strain out the water and transfer the beans to a blender. Season with salt, pepper and slowly pour in grapeseed oil. Mix until they have a paste like consistency.
-Next, place the mixture in a bowl and fold in sauteed chopped onion and fresh cilantro.
-After, transfer the mix to a pastry bag and squeeze a line onto a pastry paper sheet (about one tablespoon). After, roll up the pastry sheet and close it with a little water and flour mixture.
-Lastly, deep fry.
-Now, prepare a sauce. In a bowl, combine sour cream, onion, curry powder, salt, pepper, soy sauce, yuzo juice, cilantro and chili powder. You can also add Japanese mayonnaise or vegenaise, which is a vegetable mayonnaise.
Simply cut the spring rolls in half and serve the cilantro curry sauce on the side.
Serves: Makes 6-10 Spring Rolls
