Bite with Belkys: Monte Cristo Sandwich from Peacock Garden Cafe

All Bite with Belkys

While most people are thinking about dinner, a South Florida chef has brunch on his mind. He's adding something besides pancakes, waffles and eggs to the menu. Time to grab a Bite with Belkys.

The Chef: Oscar del Rivero
The Restaurant: Peacock Garden Cafe
The Dish: Monte Cristo Sandwich

Ingredients:

2 slices of brioche bread
2 eggs
1/2 cup of whole milk
1 tsp of brown sugar
1/2 tsp of cinnamon
1 Tbs of butter
1 slice of Swiss cheese
3 strips of cooked bacon
2 slices of roasted turkey breast
maple syrup
(fresh fruits to serve on the side)

Method of Preparation:

-Prepare an egg wash. In a bowl, add eggs, whole milk, brown sugar and cinnamon. Whisk it all together.

-Then, coat slices of brioche bread in the egg wash. Add a dab of butter on a flat top grill and cook the bread on both sides. This will make a basic french toast.

-Next, add swiss cheese, bacon and sliced turkey and top with the second slice of bread, making a sandwich. Cook this for a little more, until all the cheese is melted.

To Plate:

Slice the sandwich in half and serve with hot maple syrup and a side of fresh fruits.

Serves: 1

Serving Suggestion: White Wine Basil Sangria
