A South Florida chef makes a dish kids will love so much, they'll be asking for seconds. And parents will love it too because it can be made ahead of time. Time to grab a Bite with Belkys.
The Restaurant: Three Chicks Pizza
The Dish: Rice Balls
Ingredients:
4 cups of cooked rice, chilled
6 eggs
2 meatballs, chopped
2 chicken sausages, chopped
1/4 cup of parmesan cheese, grated
1 cup of mozzarella, shredded
2 cups of all purpose flour
4 eggs, beaten to make an egg wash
3 cups of panko bread crumbs
oil, to deep fry
3-4 cups of tomato sauce
parmesan cheese, shaved (for garnish)
Method of Preparation:
-Begin by mixing the cooked rice with eggs. Then, wrap up the bowl and let it sit in the fridge for about ten minutes.
-Next, to the rice - add meatballs, chicken sausage, parmesan cheese and mozzarella. Mix it and form the rice balls.
-After, coat the rice balls in all purpose flour, an egg wash and panko bread crumbs. Chef Kristin says you can refrigerate them for up to seven days and cook when you are ready to serve.
-Then, deep fry the rice balls in hot oil.
-In the meantime, warm up your favorite tomato sauce.
To Plate:
Serve the tomato sauce and place the rice balls in the center. Garnish with shaved parmesan cheese.
